Thanksgiving in Korea

So tomorrow is the American Thanksgiving. Since most of the teachers I work with are American, we will be having a Thanksgiving dinner at work. I had NO idea what to make, plus I didn't want to spend a lot of money on food. The turkey and stuffing will be provided but we all need to bring side dishes. I hate doing things last minute, so I came up with the idea of a vegetable salad.
After I said I would bring a vegetable salad I thought to myself that sounds really boring. I had quinoa in my apartment since my sister brought it from Canada for me. I decided to make a quinoa salad instead. I love quinoa salad but while I have been in Korea I always make big portions of food and then I never eat it again. So, it's good that I could make it for this dinner. Quinoa is so good when you know how to make it properly, which I do.  I hope everyone's dishes taste good too.

Recipe- Quinoa Salad

INGREDIENTS
  • Quinoa
  • Mango
  • Half an onion
  • Cherry tomatoes
  • Black pepper
  • Strawberries
  • Cucumber
  • Red/Green/Yellow sweet pepper
  • Half a lime
  • Olive oil

DIRECTIONS
  1. Boil two cups of water in a pot. Add quinoa. Add more water until the quinoa is soft. Reduce heat to low, cover and simmer until all the water is evaporated. Cool quinoa to room temperature; fluff with a fork.
  2. Cut up the mango, strawberries, cucumber, peppers and onions into small pieces. Cut the cherry tomatoes into halves.
  3. In a large bowl, combine the quinoa, tomatoes, cucumber, onions, pepper and stir. 
  4. Add the mango and strawberries into the bowl and stir.
  5. Pour a teaspoon of olive oil into the bowl and stir.
  6. Then squeeze half a lime into the mixtures and stir thoroughly.
